1/3 lb. ground linguica
˝ c. diced onion
˝ lb. chopped Swiss cheese
3 eggs, slightly beaten
2 c. cream
˝ tsp. salt
cayenne (dash of)
1 – 9” pastry shell or flan ring
Preheat oven to 450
degrees. Sauté onion in butter for
five minutes. Add ground linguica,
sauté additional five minutes, set aside.
Bake pastry shell five minutes, remove and sprinkle with linguica
mixture and chopped Swiss cheese. Mix
together eggs, cream, salt, and cayenne and strain into pie shell.
Bake 10 minutes at 450 degrees, then reduce heat to 350 degrees an bake
until firm.
