Gaspar's Linguica Omelette
(A delightful meal – especially when
it’s filled with spicy linguica)
˝ lb. Gaspar’s Linguica
1 small onion
several, sprigs of fresh parsley
Dice linguica
and onion; sauté in a small amount of cooking oil until onions are tender.
Chop parsley. Prepare omelette; fold in onion, linguica,
and parsley when nearly done. Serve
with hot bread and a crisp green salad. Serves
two.
